Red wine vinegar
Instructions
Peel and wash tomatillos and cut in half if any are significantly larger than others
Roughly chop and split the layers of the onion and de-seed jalapeño
Add tomatillos, onions, garlic and jalapeños to a baking sheet and season with olive oil, salt and pepper
Bake at 500 F for 10 mins, then broil on high for 3-5 mins until charred
Transfer to a blender or food processor including the juices, add cilantro, red wine vinegar and adjust salt; give it a blitz and enjoy!
