Ingredients
- 1 lb Tomatillos
- 1 medium Yellow onion
- 3 cloves Garlic
- 1/2-1 Jalapeño pepper Depending on how spicy you like it
- handful Cilantro
- 2 tbs Olive oil
- 1 ½ tsp Salt
- Black pepper
- 1 tsp Red wine vinegar
Instructions
- Peel and wash tomatillos and cut in half if any are significantly larger than others
- Roughly chop and split the layers of the onion and de-seed jalapeño
- Add tomatillos, onions, garlic and jalapeños to a baking sheet and season with olive oil, salt and pepper
- Bake at 500 F for 10 mins, then broil on high for 3-5 mins until charred
- Transfer to a blender or food processor including the juices, add cilantro, red wine vinegar and adjust salt; give it a blitz and enjoy!
