This is perfect with chips, over enchiladas, burritos or Chile Rellenos!

Ingredients
  

  • 1 lb Tomatillos
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 1/2-1 Jalapeño pepper Depending on how spicy you like it
  • handful Cilantro
  • 2 tbs Olive oil
  • 1 ½ tsp Salt
  • Black pepper
  • 1 tsp Red wine vinegar

Instructions
 

  • Peel and wash tomatillos and cut in half if any are significantly larger than others
  • Roughly chop and split the layers of the onion and de-seed jalapeño
  • Add tomatillos, onions, garlic and jalapeños to a baking sheet and season with olive oil, salt and pepper
  • Bake at 500 F for 10 mins, then broil on high for 3-5 mins until charred
  • Transfer to a blender or food processor including the juices, add cilantro, red wine vinegar and adjust salt; give it a blitz and enjoy!
