Instructions
Crush or process your cookies and mix with melted butter and add to a cheesecake springform and press firmly; cool in the fridge while preparing the batter
Beat the whipped cream and set aside then add the remaining cheesecake batter ingredients above to a mixer and beat until smooth; fold the whipped cream and pour mixture over, cover and chill for a few hours or overnight
To make the ganache warm up the remaining cookie butter and pour over; if you want to create the drip effect slide the ganache to the edge
Garnish with fresh whipped cream, crushed cookies and enjoy
