Ingredients
Crust
- 2 pkgs (250 grams/8.8 oz) Biscoff cookies
- 7 tbs Melted butter
Cheesecake Batter
- 1 cup Heavy whipping cream
- 16 oz Cream cheese At room temperature
- 8 oz Mascarpone Cold
- ⅓ cup Powder sugar
- 1 tsp Vanilla been Paste/extract
- ½ cup (100 grams) Biscoff cookie butter jar Melted and slightly cooled
Garnish
- Fresh whipped cream
- Biscoff cookies Crushed
Instructions
- Crush or process your cookies and mix with melted butter and add to a cheesecake springform and press firmly; cool in the fridge while preparing the batter
- Beat the whipped cream and set aside then add the remaining cheesecake batter ingredients above to a mixer and beat until smooth; fold the whipped cream and pour mixture over, cover and chill for a few hours or overnight
- To make the ganache warm up the remaining cookie butter and pour over; if you want to create the drip effect slide the ganache to the edge
- Garnish with fresh whipped cream, crushed cookies and enjoy
