Can’t get easier than that! No cooking needed, just prepare and refrigerate! It’s a perfect make ahead dessert!

Ingredients
  

Crust

  • 2 pkgs (250 grams/8.8 oz) Biscoff cookies
  • 7 tbs Melted butter

Cheesecake Batter

  • 1 cup Heavy whipping cream
  • 16 oz Cream cheese At room temperature
  • 8 oz Mascarpone Cold
  • cup Powder sugar
  • 1 tsp Vanilla been Paste/extract
  • ½ cup (100 grams) Biscoff cookie butter jar Melted and slightly cooled

Garnish

  • Fresh whipped cream
  • Biscoff cookies Crushed

Instructions
 

  • Crush or process your cookies and mix with melted butter and add to a cheesecake springform and press firmly; cool in the fridge while preparing the batter
  • Beat the whipped cream and set aside then add the remaining cheesecake batter ingredients above to a mixer and beat until smooth; fold the whipped cream and pour mixture over, cover and chill for a few hours or overnight
  • To make the ganache warm up the remaining cookie butter and pour over;  if you want to create the drip effect slide the ganache to the edge
  • Garnish with fresh whipped cream, crushed cookies and enjoy
