Add 2 cups of water to a pot and steam cauliflower covered for about about 15 mins
Transfer cauliflower head to a baking sheet and season with olive oil, salt, pepper and espelette; roast at 400 F for about 25 mins or desired doneness
To make the green tahini sauce- add all ingredients to a food processor and pulse
Pour this green goodness over the cauliflower, garnish with more parsley and lemon zest and enjoy!
