Whole Roasted Cauliflower with Green Tahini Sauce

Ingredients
  

  • 1 Head Cauliflower
  • 3 tbs Olive oil
  • Espelette or Paprika To taste
  • Salt To taste
  • Pepper To taste
  • zest Lemon For garnish
  • Parsley For garnish

Green Tahini Sauce

  • ½ cup Parsley Packed
  • ¼ cup Tahini
  • ½ Lemon Juiced
  • 3 tbs Olive oil
  • ½ tsp Salt
  • 2 cloves Garlic
  • scrunch Pepper
  • 2 tbs Water

Instructions
 

  • Add 2 cups of water to a pot and steam cauliflower covered for about about 15 mins
  • Transfer cauliflower head to a baking sheet and season with olive oil, salt, pepper and espelette; roast at 400 F for about 25 mins or desired doneness
  • To make the green tahini sauce- add all ingredients to a food processor and pulse
  • Pour this green goodness over the cauliflower, garnish with more parsley and lemon zest and enjoy!
