Rice vinegar

Lime
Juice and rind (optional)

Sugar

Salt

Garlic

Black peppercorns
Instructions
Bring water, vinegar, sugar and salt to boil just enough for the sugar to dissolve
Peel and slice onions and add to a jar, along with garlic cloves, boiling vinegar mixture, lime juice +rind and peppercorns
Shake and refrigerate for at least 2-3 hours or overnight and enjoy!
