Ingredients
- 1 large Red onion
- ½ cup Water
- ½ cup Rice vinegar
- ½ Lime Juice and rind (optional)
- 1 tbs Sugar
- 1 tsp Salt
- 2 cloves Garlic
- 1 tsp Black peppercorns
Instructions
- Bring water, vinegar, sugar and salt to boil just enough for the sugar to dissolve
- Peel and slice onions and add to a jar, along with garlic cloves, boiling vinegar mixture, lime juice +rind and peppercorns
- Shake and refrigerate for at least 2-3 hours or overnight and enjoy!
