Ingredients
  

  • 1 large Red onion
  • ½ cup Water
  • ½ cup Rice vinegar
  • ½ Lime Juice and rind (optional)
  • 1 tbs Sugar
  • 1 tsp Salt
  • 2 cloves Garlic
  • 1 tsp Black peppercorns

Instructions
 

  • Bring water, vinegar, sugar and salt to boil just enough for the sugar to dissolve
  • Peel and slice onions and add to a jar, along with garlic cloves, boiling vinegar mixture, lime juice +rind and peppercorns
  • Shake and refrigerate for at least 2-3 hours or overnight and enjoy!
