I love eggplant and how versatile it is. You can do so much with it and this air fried eggplant is easy, healthy and delicious! It’s a great vegetarian “charcuterie” option but yet it makes a delicious lunch as well!

I love eggplant and how versatile it is. You can do so much with it and this air fried eggplant is easy, healthy and delicious! It’s a great vegetarian “charcuterie” option but yet it makes a delicious lunch as well!

Ingredients
  

  • 1 medium Eggplant
  • Salt To taste
  • Olive oil For brushing and drizzling
  • 1 large Heirloom tomato
  • ½ cup Heirloom cherry tomatoes
  • ¼ cup Pesto
  • 1 Burrata ball
  • 2 slices Sourdough bread Toasted
  • Flaky sea salt

Instructions
 

  • Wash and slice your eggplant, season with salt and layer on paper towels to get the excess moisture out
  • Brush eggplant with olive oil and air fry at 390 F for about 10-12 mins as you flip it half way through
  • Assemble your board with sliced heirloom tomatoes, eggplant, burrata, toasted sourdough bread and pesto and enjoy!
