I love eggplant and how versatile it is. You can do so much with it and this air fried eggplant is easy, healthy and delicious! It’s a great vegetarian “charcuterie” option but yet it makes a delicious lunch as well!

Ingredients
- 1 medium Eggplant
- Salt To taste
- Olive oil For brushing and drizzling
- 1 large Heirloom tomato
- ½ cup Heirloom cherry tomatoes
- ¼ cup Pesto
- 1 Burrata ball
- 2 slices Sourdough bread Toasted
- Flaky sea salt
Instructions
- Wash and slice your eggplant, season with salt and layer on paper towels to get the excess moisture out
- Brush eggplant with olive oil and air fry at 390 F for about 10-12 mins as you flip it half way through
- Assemble your board with sliced heirloom tomatoes, eggplant, burrata, toasted sourdough bread and pesto and enjoy!
