Ingredients
- 6 small Tortillas
Filling
- 1 lb Ground beef
- 1 medium White onion
- 1 medium Potato
- 3 tbs Olive For sauté
- Mexican seasonings To taste
- Salt To taste
- Pepper To taste
Picco de Gallo
- 1 Tomato
- ½ White onion
- ½ cup Cilantro
- 1 Lime Juiced
Toppings
- Shredded iceberg
- Sour cream
- Cheddar cheese Shredded
Instructions
- Chop your onion and potato and sauté over medium heat in olive oil, salt and pepper; cover and cook until softened
- Make a well and add your ground beef, season with your Mexican seasonings, salt and pepper and cook the beef on its own for a few minutes then mix with the potatoes and onions; cook until no more pink; optionally remove some of the excess fat out
- Top tortillas with beef and shredded cheddar; bake at 400 F until the cheese is melty, it should take about 8 mins
- Top with lettuce, avocado, sour cream, Picco De Gallo and enjoy!
