I literally have this dough in a zipper bag in my fridge at m all times. Besides making delicious homemade pizza, you can use it to make bread rolls and our favorite  “mekici” – aka Bulgarian fried dough.

I literally have this dough in a zipper bag in my fridge at m all times. Besides making delicious homemade pizza, you can use it to make bread rolls and our favorite  “mekici” – aka Bulgarian fried dough.

Ingredients
  

  • 2 cups Warm water Around 110F
  • 1 tsp Active dry yeast
  • 2 tsp Honey
  • 1 ½ tsp Salt
  • 1 tbs Olive oil Plus a drizzle to add to the zipper bag
  • 6 cups (720 grams) APF (all-purpose flour) Plus some extra for dusting

Instructions
 

  • Add water, salt, yeast, oil, flour and honey to your mixer bowl with the hook attachment; alternative you may knead by hand
  • Knead for about 5-7 mins until the dough starts separating from sides of the bowl
  • Pour dough over a floured surface, fold the edges of the dough for a few minutes to stretch the gluten and shape it into a ball
  • Add dough to a greased zipper bag and refrigerate overnight
  • Pull out of the fridge at least 30 mins before using or microwave for 15-20 mins to soften it up
  • Roll your pizza dough, add your favorite sauce, cheeses, toppings and enjoy 😊

Notes

The proper way of measuring flour is to fluff the flour with a spoon, scoop it into the measuring cup and level. A cup of flour should weigh approximately 120 grams.
