Besides crunchy, healthy and delicious this salad is one of the best for weight loss. This salad was my mama’s secret weapon to get in shape after she had my brother! Furthermore, this salad is perfect for meal prep, it stores beautifully in the fridge!

Ingredients
  

  • ½ medium Head of cabbage
  • 1 medium Carrot
  • 4 Spring onions
  • 1 medium Tomato Of choice
  • 1 Cubanelle pepper
  • ½ English cucumber
  • 1/4n cup Parsley
  • ¼ cup Dill

Dressing

  • ¼ cup EVOO Extra virgin olive oil
  • 3 tbs Red wine vinegar
  • 2 tsp Salt To taste

Instructions
 

  • Thinly slice cabbage and chop the onions, tomatoes, Cubanelle pepper, cucumber, parsley and dill; shred the carrots and throw into a mixing bowl
  • To make the dressing- add EVOO, red wine vinegar and salt to a jar and give it a shake
  • Pour dressing over, mix and enjoy!
