Ingredients
- ½ medium Head of cabbage
- 1 medium Carrot
- 4 Spring onions
- 1 medium Tomato Of choice
- 1 Cubanelle pepper
- ½ English cucumber
- 1/4n cup Parsley
- ¼ cup Dill
Dressing
- ¼ cup EVOO Extra virgin olive oil
- 3 tbs Red wine vinegar
- 2 tsp Salt To taste
Instructions
- Thinly slice cabbage and chop the onions, tomatoes, Cubanelle pepper, cucumber, parsley and dill; shred the carrots and throw into a mixing bowl
- To make the dressing- add EVOO, red wine vinegar and salt to a jar and give it a shake
- Pour dressing over, mix and enjoy!
