My Baba’s (grandma’s) stuffed peppers

Ingredients
- 4 Italian peppers
- 4 Tomatoes On the vine
- 2 cloves Garlic
- 2 Eggs
- 2 cups Feta
- Salt To taste
- Pepper To taste
- Olive oil To taste
- Parsley To taste
Instructions
- Cut tomatoes into 8 pieces and add to a greased baking dish, then slice the garlic on top and season with salt, pepper, olive oil and mix
- Crumble the feta and mix with the eggs, parsley and black pepper
- Remove the pepper stems and de-seed them; stuff the peppers and arrange them on top of the tomatoes as you elevate the open side over more tomato slices so the egg/feta mixture doesn’t leak
- Season with salt, pepper, parsley and olive oil and cook in a preheat oven at 400 F for about an hour
- Finish with more parsley, peel (optionally) and enjoy!
