“Banichki”

Warm cheesy melt in your mouth phyllo dough pies. Cheesy and soft on the inside and buttery and crunchy on the outside. These are a staple in Bulgarian cuisine but also very popular in Greek, Turkish cuisine and more!

Ingredients

  • 12 Phyllo dough sheets
  • 2 cups Good quality Feta I’m using Bulgarian because it’s so creamy and delicious
  • 4 Eggs Lightly beaten
  • ½ cup Butter Plus 1/2 cup vegetable oil
  • 1 cup Mozzarella cheese Optional

Instructions

  • Melt butter and mix with vegetable oil
  • Beat your eggs
  • Crumble your feta
  • Brush the phyllo sheet with oil and butter mixture, eggs and add the cheeses
  • Grab two sheets and roll them up into a stick, then roll into a circle
  • Add to a baking sheet, brush the remaining oil and bake 400 F for 25-30 mins
  • Optionally, sprinkle some powder sugar if you like sweet and savory taste together and enjoy!
