Ingredients
- 6 Tortillas
- 1 New York strip steak
- 1 medium Yellow onion
- 1 Red bell pepper
- 1 can Black peppers Drained
- 1 ½ cup Cheddar, Pepper Jack or any cheese Shredded
- 1 tbs Mexican/Taco seasoning Any
- 3 tbs Olive oil for sauté Plus 1 tbs for the steak
- 1 Lime Juiced
- Salt To Taste
- Pepper To Taste
- Butter For searing the tortillas
- To serve with: Picco de Gallo, sour cream and guacamole 🥑
Instructions
- Wash, chop your peppers and onions and sauté in olive oil until softened over medium-high heat; season with Mexican/taco seasoning, salt and pepper and add drained black beans and the juice of a lime
- Season and grill your steak to desired temperature and chop it
- Shred some cheese of choice
- To assemble- melt butter over medium heat, place your tortillas on the pan and start layering cheese, pepper, onion and bean mixture, steak and more cheese on top
- Fold tortillas and sear both sides until the cheese is melty
- Serve with Picco de Gallo, sour cream and guacamole and enjoy!
Notes
Always shred your cheeses for the best melting results!
