These are so incredibly delicious and the perfect sweet bite for any party

Ingredients
  

  • 14 oz Puff Pastry Thawed according to package instructions
  • 20 Berries Of choice
  • Coarse sugar For sprinkling
  • Powder sugar
  • Mint leaves

Custard

  • 4 Egg yolks
  • ½ cup Sugar
  • 1 ½ cup Milk Warm
  • 3 tbs Corn starch
  • 1 tsp Vnilla bean paste/extract

Egg Wash

  • 1 beaten Egg Plus 2 tsp water

Instructions
 

  • Whisk egg yolks, sugar and cornstarch until smooth and slowly pour your warm milk; transfer to the stove over medium low heat and start stirring until it thickens; add vanilla bean and stir again; optionally, run it through a sieve for extra smoothness and transfer into a pastry bag as you tie it with a rubber band
  • Roll your puff pastry dough gently over a floured surface and cut into 20 squares; fold each square into a triangle and make two incisions sideways then transfer each side to the opposite direction
  • Transfer onto a cookie sheet and brush with egg wash and sprinkle coarse sugar over the edges; fork the middle a couple of times to prevent the middle from puffing
  • Bake at 400 F for about 20 mins
  • Transfer pastries on a cooling rack and fill them in with the cooled custard, top with berries, powdered sugar and mint leaves and enjoy!
