Blanched Green Bean Salad with Champagne Vinaigrette and Maple Sriracha Bacon

Ingredients
  

  • 2 lbs Green beans
  • Stilton blue cheese Or any you choose

Maple Sriracha Bacon

  • 1 lb Bacon
  • 1 tbs Champagne vinegar
  • 1 tbs Dijon mustard
  • 1 Shallot Chopped
  • 2 tsp Maple syrup
  • 1 tsp Salt
  • scrunch Black pepper

Instructions
 

  • Bake bacon at 400 F, once cooked brush maple sriracha sauce and broil for a few until caramelized
  • Wash and trim green beans
  • Salt generously your boiling water and boil beans for 7-9 mins then transfer to an ice bath for 5 mins
  • For the dressing- mix all ingredients above and pour over drained and pat dried beans
  • Add chopped bacon and toss
  • Finish with more bacon and crumbled Stilton Blue cheese and enjoy!
