Aka roasted peppers stuffed with feta and eggs! These are near and dear to my heart and a staple in Bulgarian cuisine! You can enjoy them as an appetizer or as your whole meal, they go great with salads also!

Ingredients
  

  • 4 Large peppers
  • Olive oil For frying
  • 2 Eggs Beten
  • Flour For dredging
  • Bread crumbs For dredging

Filling

  • 10 oz (about 300 grams) Good quality feta I'm using Bulgarian feta
  • 2 Eggs Beaten
  • Parsley
  • 1-2 cloves Garlic Crushed

Instructions
 

  • Roast your peppers, let cool, peel and de-seed
  • Make the filing by crumbling the feta and mixing it with eggs, parsley and garlic
  • Fill up the peppers, dredge in flour, eggs and lastly bread crumbs
  • Shallow fry over medium heat on both sides until golden and enjoy!
