Roasted Tomato and Burrata Crostino with Sweet Blistered Tomatoes and Fresh Pesto

Ingredients
- 4 slices Baguetta (cut sideways) or ciabatta bread
- 1 cup Cheery Tomatoes
- 1 clove Garlic
- 4 mini (2 oz) Burrata balls
- 3 tbs Olive oil
- Salt To taste
- Pepper To finish
- Basil leaves
Instructions
- Add tomatoes, garlic, olive oil, salt and pepper to an oven/air fryer safe dish and air fry at 390 F for about 10 mins (alternatively roast in the oven but it will take a bit longer)
- Slice your bread, dress in olive oil, salt and pepper on both sides and pan sear over med high heat until charred
- Smear the burrata filling on the bread, add your tomatoes with the juices, pesto, basil leaves and enjoy this indulgence!
