Roasted Tomato and Burrata Crostino with Sweet Blistered Tomatoes and Fresh Pesto

Ingredients
  

  • 4 slices Baguetta (cut sideways) or ciabatta bread
  • 1 cup Cheery Tomatoes
  • 1 clove Garlic
  • 4 mini (2 oz) Burrata balls
  • 3 tbs Olive oil
  • Salt To taste
  • Pepper To finish
  • Basil leaves

Instructions
 

  • Add tomatoes, garlic, olive oil, salt and pepper to an oven/air fryer safe dish and air fry at 390 F for about 10 mins (alternatively roast in the oven but it will take a bit longer)
  • Slice your bread, dress in olive oil, salt and pepper on both sides and pan sear over med high heat until charred
  • Smear the burrata filling on the bread, add your tomatoes with the juices, pesto, basil leaves and enjoy this indulgence!
