Strawberry Rhubarb Turnovers

When rhubarb is in season we have to make strawberry rhubarb desserts! The combination between sweet strawberries and tart rhubarb wrapped in flaky buttery pastry is hard to resist!

Variations and Substitutions

You can easily substitute the fruit with any of choice, depending on taste preference and seasonality! You can as well use vegan pastry if you prefer!

Recipe Notes 

If you want to achieve best results, aka puffy flaky pastry- make sure you thaw puff pastry sheets according to package instructions in the refrigerator or on your counter;

Freeze pastries for 10 minutes prior to baking in order to create those buttery layers;

Pastries are best when enjoyed warm out of the oven but you can store leftovers in the fridge to enjoy later, optionally you van reheat them;

No, puff pastry layers will get ruined and you will end up with a flat, gooey dough!

Ingredients
  

  • 14 oz puff pastry
  • 1 tbs flour for dusting
  • 2 sticks rhubarb
  • ¼ cup sugar
  • 1 tsp vanilla bean paste/extract
  • 3 tbs course sugar for sprinkling
  • vanilla ice cream for serving; it's optional but highly recommended
  • Mint leaves

Strawberry Sauce (optional)

  • 1 cup strawberries
  • ¼ cup sugar

Egg Wash

  • 1 egg beaten
  • 1 tsp water

Instructions
 

  • Wash and chop strawberries and rhubarb; macerate with sugar and vanilla bean paste and set aside
  • Roll your puff pastry to an 15 x 10 inch rectangle and cut into six squares;
  • Add 2 spoonfuls of the mixture and close the edges like an envelope; repeat the same for all pastries;
  • Transfer to a baking sheet and brush egg wash; sprinkle coarse sugar and bake at 400 F for about 20- 25 mins;
  • If you choose to make strawberry sauce, add strawberries and sugar to a sauce pan and cook over med heat; strain and drizzle over the pastries;
  • Finish with powdered sugar, ice cream, strawberry sauce, mint leaves and enjoy!
